Sweet potato and zucchini frittata
I thought I had lunch guests (oh la di da!) but unfortunately they didn't show. So I got to reap the benefits with today's lunch!
I love frittatas as a pretty quick, easy and fairly healthy lunch. And I love looking for different combinations that people have come up with to try. Today I found this one and it's delicious!
Just cook the onion and sweet potato for about 6 mins then add the zucchini and cook for another 5 mins. Add the whisked eggs and cook for about 10 mins. Then sprinkle Parmesan on top and pop it under the grill until the top is cooked and the cheese is browned. Yum!

When in doubt make a salad! That's my new motto. I couldn't decide what to make Austin and me so I had a look at the things I had in the fridge and there were all the makings of a Greek salad. So that's what I made! And best of all it has all Austin's favourite vegies in it.

My uncle has some lovely neighbours who give him food every week or two. They're Lebanese so the food is delicious. But my uncle doesn't really like it that much so he passes the meals along to us. We're the lucky ones!
Recently it was the end of Ramadan and so the food my uncle got given was amazing and copious! We had it for two dinners and my lunch today!
I took some rice and a stewed beef dish and some strawberries and grapes for my very organised lunch and it was so yummy!

Lunch 5
Oops! No picture today! It was one of those days at work where you're so busy that you forget about lunch until 2pm and by then all the nice food places are closing and there's just the all-day coffee shops open. So I got myself a quiche and a yoghurt and ate them at my desk. But then I forgot all about taking a photo! I guess that was bound to happen at least once in the thirty days!

Lunch 2
Always after a BBQ there are leftovers. Why is that? Anyway, it's not a bad thing because you get to have the BBQ for a few meals after and not have to think about preparing and making them!
Last night we had family over and I was in charge of salads and dessert. I felt like something a bit different from the normal potato salad, rice salad, pasta salad etc. I found these on the Taste website again (www.taste.com.au) and they were great, easy to prepare and quick too.
Since we keep getting more potatoes than we'll ever be able to keep up with, I made a creamy potato bake, which is so simple. Just layered sliced potato, onion and garlic and topped with cream, Parmesan and salt and pepper.
Thinking of what's in season and in the shops, I found an asparagus, haloumi and zucchini salad and a baby beetroot and snow pea salad. In both you blanch the vegies and for the beetroot salad there's a balsamic and olive oil dressing and you also need to toast some pumpkin seeds.
So far, my 30 Lunches have been pretty fancy compared to what's coming up for the next few days at work. That happens on weekends sometimes, when we're lucky! What about you?

Lunch #1 is here!
Spring is here and so is 30 Lunches!
To start off, one of my favourites for lunches with Austin - corn fritters. Only today, because it's the start of 30 Lunches, I've gone all out and fancy with corn and zucchini fritters, ooooh! I found this recipe on my favourite website, taste.com.au, and already it might have to replace plain old corn fritters!
